Mobile and MTX games sell better make more money
There are certain instances where certain games on Windows run slightly better because the Windows function implementation was possibly written slightly better. However, this is becoming rarer and rarer. I’ve faced it only when playing random 3d indie games.
So I’m guessing that it’s worse than Nvidia but has the scope to become better because it’s open-source.
What is the intel GPU driver scenario on Linux? What about game stability?

Some of them are targeted to new users but most of them are for gaming enthusiasts. If you are a newbie, stick to SteamOS which is still great. This would be my recommendation.
If it’s an immutable system, it should be easier to ensure system integrity IMO.

I’m really interested in how a different OEM handles SteamOS. Will the OS be locked down right from Valve? Or will Valve allow some OEM bloat (MyAsus) to be running on the device?
There is one issue where I want Valve to become a bit flexible; easy installation of 3rd party launchers. I know it’s against their interests to do so (even though the community has come up with alternatives and thankfully Valve is not stopping them). However, majority of people get confused and state that it’s not possible to play Epic/GoG games. Maybe Valve will take a small hit in sales because of this but Linux gaming will improve in the long run.

If you spend a little time on the dark alleyways of Steam, you will occasionally come up with hidden gems. The indies scene is currently thriving.
I have been using Linux for nearly a decade and I’m too scared to try Arch. It’s not for beginners.
What OP is doing is trying to learn how to drive a car on a busy highway with an instructor on the phone. It’s not going to be pretty.
