They work fine these days. Thunderbolt is much more mature now and Linux has always supported pcie hotplug. It can get weird if you unplug it in the middle of doing something but just dont do that.

There’s another underlying problem causing your tpm issue. You will need to resolve it first to use the tpm.
Disabling it was basically a work around
Archival should be as close to source quality as possible. VBR just adds more noise to the audio whether you can hear it or not. That means copying it to different mediums will eventually start to notice the quality reduction over time.

You may want to reenable the tpm if you choose to use it as keystore for encrypted disks
